These decadently rich cookies are surprisingly quick and easy. You’ll have people thinking you spent a lot of time in the kitchen — if you can bring yourself to share them, that is!
You’ll find a printer-friendly version of the recipe at the bottom of this page.
Adapted from The Gift-Giver’s Cookbook, by Judith Choate & Jane Green 1989.
Ingredients:
½ cup salted butter (1 stick)
1½ cups light brown sugar
1 large egg
1 tsp vanilla
1½ cups flour
1 cup coarsely chopped pecans (4 to 5 ounces)
Preparation:
1.) Preheat oven to 325°F. Butter a quarter sheet pan or 9″ x 12″ rimmed cookie sheet.
2.) Cream together the butter and sugar until light and fluffy. Add the egg and vanilla, and mix well.
3.) Add the flour and nuts. Mix until well combined.
4.) Spread the mixture on the prepared sheet pan.
5.) Bake for 25 minutes or until lightly browned. It’s okay if the center still seems a bit gooey. When mostly cool, cut into squares and transfer to a wire rack to finish cooling.
6.) If you’re not serving these immediately, you can store them individually wrapped in plastic wrap in a loosely covered container for up to 10 days.
