Parsley-Lemon Japonica Rice

Parsley-Lemon Black Japonica Rice

This gorgeous rice deserves far more attention than it gets. It cooks up to a beautiful mahogany color, and has a flavor all its own. 

Ingredients:

½ cup black japonica rice

1 cup water

¼ tsp salt

¼ tsp pepper

juice of ½ lemon

¼ cup coarsely chopped parsley

1 tsp extra-virgin olive oil

Preparation:

1.) Bring the water to a boil in a small pan. Add the rice, stir, & cover. Reduce heat to simmer. Cook 40 minutes.

2.) Stir in salt, lemon juice, & parsley. Serve hot.
