Easy Cucumber Salad

This has been a favorite in my family for as long as I can remember. My mom used to make it with red onions, but I prefer Vidalias. Either way, it’s fast, easy, & scrumptious! It’s best with young cukes with underdeveloped seed cavities, or with seedless cukes, but any will do. If the only cukes you can find have seeds that are big & tough, just slice the cuke vertically & scrape the seeds out with a spoon. Most of the mayo ends up at the bottom of the bowl, so it’s not even a diet buster. (Unless you sop it up with bread, then all bets are off.) I suppose some folks would call this 4 servings, but in my house it’s just enough for 2! You’ll find a printer-friendly version of the recipe at the bottom of this page.

Ingredients:

1 large cucumber

1/4 sweet onion

1 Tbsp Hellman’s mayonnaise (my family all agree that no substitutions are permissible!)

1/4 tsp Lawrey’s salt (ditto on the substitution issue)

Directions:

1.) Slice cuke, fairly thin. Slice onion, very thin.

2.) Stir all ingredients together. Let sit about 5-10 minutes, & stir again just before serving. That’s it!
